Our vineyard parcels are harvested by hand, using small crates so as to preserve the grapes before pressing.
For our organic rosé wines, we harvest and crush at night to keep our grapes as cool as possible and preserve the aroma and color of our wines.
We keep handling of our grapes to a minimum before pressing, and avoid destemming for the rosés. For our reds, we harvest early in the morning, always long before the hot sun of midday arrives.
